I've always wanted to have friends over for a thanksgiving dinner and last night, I finally did it. I started cooking at 2:30 pm and dinner was ready at 7 pm. Trey was doing his normal Sunday thing -- sitting on the sofa watching football. He asked me, "Do you need any help?" I answered, "No, you're doing exactly what you need to be doing." With that being said, he did help me clean up some of the mess before our guest arrived. So, thanks!
Mike, Erin and their two girls joined us for a Thanksgiving feast. Erin watches Cheyenne during the work week. Erin has been to the house numerous times, but this was the first time to have the entire family over for dinner. It was a real treat.
Before I started making anything, I called the expert, my mom and asked her for some turkey advice. The last two times, I made turkey she was with me...this time I flew solo. Thanks mom for answering all my questions. I was terrified, it wouldn't be ready in time and it wouldn't cook all the way through. But it turned out great.
A good portion of the meal was paleo friendly.
The Menu
Turkey
Paleo Stuffing
Holiday Yams
Broccoli Cauliflower Casserole
----Crowd Pleasers for Everyone---
Creamy Macaroni (Paula Deen Recipe)
Cranberry Sauce (The Can, Trey's Favorite)
Rolls (Whole Wheat Rolls, homemade by Erin)
Oreo Cookie (another homemade recipe by Erin)
All of the paleo recipes I got from Everyday Paleo. Here is my cheat sheet. I can say all the recipes I made are keepers. SERIOUSLY.
Paleo Stuffing - No, bread stuffing. I was cooking with chicken sausage, which I never use and I threw the sausage with the wrap in a heated pan. I wasn't sure if I could cook the wrapped sausage, so I had to grab it out of the pot and peel it off. I'm such a rookie.
Holiday Yams were surprisingly delicious. I usually prefer just salt and pepper on my sweet potatoes, but I have to admit it was fantastic with all the extras.
Erin made homemade Oreo cookies. So good.
What a great night! What are your plans for Thanksgiving? Lots of yummy food, I hope.
