Wheat Germ Muffins
INGREDIENTS
2 cups milk (I used 2%)
2 eggs
6 tablespoons honey
6 tablespoons olive oil (I used extra virgin Olive Oil)
2 cups wheat germ
2 cups whole wheat flour
1 teaspoon salt
2 1/2 tablespoons baking powder
-you could also throw in some flaxseed
DIRECTIONS
1. Preheat over to 350
2. Mix wet ingrediets, plus wheat germ together in a bowl
3. In another bowl mix the flour, salt, and baking powder
4. Add the flour mix to the wheat germ mix and stir very well
5. Grease muffin tin and fill with batter
6. Bake for about 20 minutes or until golden brown and toothpick inserted comes out clean
This recipe makes a lot of muffins! It can feed a crowd. I ended up freezing the leftovers.
Alright, here is the buffet spread. Am I making you hungry? There are some tomatoes, limes, and cilantro somewhere in the back. We also had beans and brown rice. Oh, and I have discovered plain greek yogurt is a great sour cream substitute. Try it and let me know if you agree.
