Taper Snacks

First, I want to say, I took two days off from running because me knee and back hate me. I didn't even see this coming. Hey, body, get with the program, you're running an ultra in a week! 


If I recall, I'm pretty sure I felt like this right before Dallas White Rock Marathon. Tomorrow, I will test the pavement and go on my long run. 12 miles and it's a taper/long run. It'll feel like a 5K compared to the 20 milers, I've been running.


Since I'm running  less, I'm eating more -- SNACKING pretty much all the time. My go to snack, lately has been cashews. OHHHH, Cheyenne and I love them, but here is something different --- Kale Chips.

I made these the other night. I used this recipe check the link.
Kale Chips
Rinse, wash, dry the kale. Remove the leaves from the stems. Kale Chips
Cut into smaller pieces. Coat with sea salt and EVOO. Kale Chips
Put in the over. This was preheated to 250. Let it be for 10 minutes then turn over the leaves and bake for 10 more minutes. And you're done. That's it.

They weren't over the top super duper great or anything -- but they were alright. I'd make them again, instead next time add balsamic vinegar.
